I can’t believe it’s been a year already!  What a fun and challenging adventure it has been!

I started this blog for a few reasons…  After starting to eat paleo to help with my rheumatoid arthritis symptoms, my health really began to improve.  I was amazed by what food could do for me, and I wanted to share that with others!  Eating this “new” way, using some ingredients I had never used before, also reignited my love for cooking. Lastly, because I know myself well, I needed some accountability in this journey!  Knowing that there may be one other person that looks forward to seeing what I create, is worth it to me!  I’m so incredibly thankful to have started this blog, and for everything it has brought into my life.  I have met some amazing people, who like me, have turned to real food to heal their bodies.  Knowing that I’m not alone, and that I have some say in the matter of my health has been incredibly empowering!

I still have a ton to learn, but my photography has sure changed from a year ago!  I started with just my cell phone, and whatever surface and dish I had.  I was hesitant to get going on this, since I knew basically nothing about blogging and I wasn’t some fancy chef, but I pushed on, and I’m really glad I did.

Let’s celebrate, shall we!?

I figured it was only fitting that we have cookies to celebrate!  Sugar-free cookies, that is.  Yup, these are 21 Day Sugar Detox friendly!

There’s a healthy dose of good fat in their, too.  Hope you like coconut!


I took these to work the other day and I’m not so sure my conventional-eating coworkers enjoyed them as much as someone coming off their 21DSD (me).  Hey, if you gotta do it, add a little bit of honey or maple syrup.  I promise it won’t hurt my feelings.  Although, I’ll probably suggest you do the 21DSD for yourself! 😉

I’m excited to see how this here little piece of the web grows in the coming years!  Looking forward to growing old with The Tasty Remedy!

Almond Joy No-Bakes

Ingredients

  • 1/2 cup Softened Coconut Butter
  • 1/2 cup Palm Shortening
  • 1/2 cup Full Fat Coconut Milk
  • 1 pinch Sea Salt
  • 1/4 cup Cacao Powder
  • 1/2 tsp Almond Extract
  • 1 cup Coconut Flakes
  • 1 cup Shredded Coconut

Instructions

  • Fill a medium sized pot with about 2 inches of water, and heat over medium-high. Bring to a simmer.
  • Place a double boiler or heat-safe glass bowl over the pot of water and melt the coconut butter and palm shortening. Stir until smooth.
  • Add the coconut milk and give a quick stir.
  • Stir in the salt and cacao powder until smooth and remove from heat.
  • Add the almond extract and stir.
  • Dump in the flaked and shredded coconut and stir until well combined.
  • Using 2 tablespoons, scoop up spoonfuls of the cookie mixture and place them on a baking sheet in small mounds.
  • Transfer the baking sheet to the freezer for 15 minutes to set the cookies.
  • Store in the fridge until ready to serve.
